RECIPIES


The following is a compelation of only a few of the southern recipes available.  For further information about these recipes, their variations, and to find more recipes you can look in "the African-American Cookbook", "Food of a Younger Land","America Eats", or any number of cookbooks dedicated to southern cuisine.

 

Brown Gravy

 

2 Tbsp. Fat

3 Tbsp. Flour

1/4 tsp. Salt

1/8 tsp. Pepper

1-1/2 cup Water, cold

 

 Heat fat in skillet, Add flour, salt and pepper and stir until flour had browned.  Add the cold water and simmer for 5 min. Makes 4-5 servings. 

 

 

Fried Pork Chops

 

4   Pork Chops

1/2 cup  Flour

1/8 tsp. Salt

1/8 tsp. Pepper

2 cups Oil

 

Mix flour, salt and pepper together, dredge chops in flour mixture (a bag is useful) and place chops in hot oil.  Fry until golden brown.  Aprox. 20 Min.  Drain on paper towels. 

 

 

Succotash

 

1 cup  Corn

1 cup  Lima Beans

1/2 tsp Salt

2 Tbsp. Margarine/butter

Dash of Pepper

 

Combine all the ingredients in a pot and heat for ten minutes over low heat. 

 

Hush Puppies

 

1 cup Cornmeal

3/4 cup Flour

2 tsp. Baking Powder

1 Egg

3/4 cup Milk

1/2 cup Onion- chopped

1 tsp. Salt

1/4 cup Oil

 

Mix cornmeal, flour, baking power and salt.  In seperate bowl beat together milk, eggs and onion.  Add flour mixture and mix well.  Shape into small balls and drop into skillet of hot oil.  cook until golden brown.  This only takes about a minute.
